BREAKFASTS

Simple: jam (raspberry and strawberry) jam and fresh Camembert on bagels, bread and butter pickles and gummy bears.
Corn Pancakes
Crepes
Oatmeal Scones
Eggs Benny
Joel’s Quesadillas
Old Favourites: French Toast, Eggs any style, Pancakes.

1. CORN PANCAKES 2 generous servings
At home:
Combine in zip lock bag and mix together:
3/4 c cornmeal
3/4 c whole wheat flour
1/2 c raw wheat germ
1/2 c milk powder
2 tsp baking powder
1/2 tsp salt
5 tbsp oil or butter
1 tbsp honey (optional)
At camp: Add 1 1/2 cups water. Stir lightly. Cook on hot oiled fry pan. Save leftovers for lunch. Tasty!

2. CREPES
Depending on the filling, can be eaten at breakfast, lunch or dinner.
Batter: Mix in bowl and beat till smooth: 1 c flour, 1 egg, 1 c milk or water, pinch salt, 1 tbsp sugar, ¼ c oil. Add milk if too thick to spread evenly over pan. Use good quality frying pan. Cook till lightly browned on both sides. Stack and keep warm while cooking rest.
Fillings: 1. Blueberries and Rhubarb. Mix equal amounts in pot with small amount water and boil. Simmer for few minutes until rhubarb tender. Roll in crepe and serve with maple syrup. 2. Hot Raspberries and Nutella. Heat together in pot. Roll and serve maple syrup. 3. Strawberries and cream 4. Savoury filling. Saute onions and asparagus with thyme, salt and pepper, mix with cottage cheese.

3. OATMEAL SCONES
1 c all purpose flour
1 tsp baking powder
½ tsp baking soda
¼ c sugar
dash salt
½ c margarine
1 c oatmeal
½ c rasisins
⅓ c buttermilk (stir 1 tsp vinegar into ⅓ c milk and let stand 5 min).
At home:In bowl, mix flour, baking powder, baking soda, salt and sugar. Stir in margarine and cut in to form pea sized chunks. Stir in oatmeal and raisins until well mixed. Add buttermilk gradually, stirring with a fork, just until the dough starts to follow the fork around the bowl. Kneed the dough in the bowl a couple of times. Turn out onto floured baking sheet and pat into a 7-inch circle. Score into 8 wedges. Bake at 350°F for 25 min or until golden brown on the bottom.
At camp: Press dough into Outback Oven pan. Score into 8 wedges Bake for 20-25 minutes.

4. EGGS BENNY
Bring along a foil pack of Hollandaise sauce to mix with water, a tbsp. of butter and some lemon juice. Place poached eggs over smoked salmon or sliced ham or 5-second (precooked) bacon on English muffins and drizzle with Hollandaise.

5. JOEL’S BREAKFAST QUESADILLAS
3 corn tortillas per paddler
half a pear per paddler, sliced very thinly and sprinkled with cinnamon and nutmeg
Queso fresco (or substitute goat cheese), sliced.
Oil the griddle or fry pan and place over medium-high heat. Arrange slices of pear and cheese on half of each tortilla. Fold over the tortilla and heat until golden brown. Flip and heat the other side. Try to eat just one!

6. OLD FAVOURITES
a. French Toast. Bread, eggs, milk, cinnamon, nutmeg, margarine, maple syrup, jam
b. Eggs Any Style. Scrambled with onions, cheese, hot pickled peppers, garlic. Fried. Poached. Omelettes.
c. Pancakes. Use premixed mixes, margarine, maple syrup, jam
