1. PAPAYA & CILANTRO SALSA
1 papaya
1/2 red bell pepper
1/2 yellow bell pepper
1/2 green bell pepper
1 small tomato, peeled and seeded
2 bunches cilantro, coarsely chopped
1 tbsp. olive oil
Juice of 3 limes
Salt and pepper to taste
Peel the papaya, cut it in half, and remove the seeds. Dice and place in a bowl. Finely dice the bell peppers and tomato. Add the cilantro, olive oil, lime juice, salt and pepper. Mix well and check the seasonings.
